Whilst I’ve been in the UK, I’ve really missed home and cooked meals prepared by my mom. One thing I miss even more is Mexican food.
As it borders Mexico, America has some great authentic Mexican food. Growing up, my family and I travelled a lot in America, and we would regularly stop at Mexican restaurants to eat. So this recipe brings back fond memories from my childhood.
Eventually, I got tired of craving the food so in my first year I bought some of the ingredients and tried to recreate the memories. Surprisingly, it worked out well! So, here is my recipe for some chicken fajitas with rice and refried beans. The chicken and veggies cook in about 20 to 25 minutes, the rice takes around the same time, and the beans are usually done within five minutes.
It’s a quick, easy, and super affordable meal. The recipe makes around two to three servings so you can meal prep it for easy meals if you’d like to. It is super tasty, but I wouldn’t recommend trying to eat it all as one serving.
I’ve made this recipe for my friends a few times, and they all loved it and have tried to recreate it themselves. A lot of times, we tend to miss recipes from home, and instead of sitting there and craving it, you should just grab some ingredients and give it a go.
