Recipes that hero eggs and potatoes

I have always enjoyed cooking and during the lockdown, I have especially found it relaxing. I usually listen to some music whilst cooking. I love to travel and exploring new places and cultures. During my travels, I try out local food and have come across different recipes that I like to cook.

Frittatas or omelettes are a great way to use up vegetables and are quick and easy to make. You can have them for breakfast, brunch, lunch or supper. I am sharing two recipes that hero eggs and potatoes which are a staple in my pantry as they are so versatile. The first recipe is a popular Parsi dish that I make often. Mumbai is a cosmopolitan city and a melting pot of diverse cultures as communities have settled here and introduced their dishes. The second recipe is a traditional Spanish dish. I came across this recipe on a TV show. Both these recipes require few ingredients that you'll find in your kitchen. You can easily source your ingredients well within your student budget from Preston market or any store.

Parsi Style Fried Eggs on Potato and Onions

Serves: 2

  • 2 tbsp vegetable oil
  • 3 free-range eggs
  • 2 green chillies chopped
  • 1 medium onion diced into cubes
  • 2 medium potatoes peeled and diced into small cubes
  • ½ tsp cumin seeds
  • ¼ tsp black pepper powder
  • Salt to taste
  • Chopped coriander for garnish

Spanish Potato Omelette

Serves: 2

  • 2 tbsp olive oil
  • 3 free-range eggs
  • 1 medium onion diced into cubes
  • 2 medium potatoes peeled and diced into small cubes
  • ¼ tsp cracked black pepper powder
  • Salt to taste
  • Chopped parsley for garnish (optional)

Tip: You can replace, substitute or remove any ingredients based on your preference or depending upon what is available in your kitchen. Get creative and upgrade your eggs by adding mushrooms, tomatoes, courgettes or cheese. You could spice it up by adding garlic, paprika and/or chilli flakes.
